Will I only need 1 pair for Powerblocks to increase weight by 2.5 lbs(assume platemate will stick to side w add-on weights)? will

I believe each side is 2.5 pounds so a pair equals 5 pounds

I'd say no. If you put 2 on a single dumbbell, that would be 5 pounds and you probably already have a 5 pound plate for that purpose. Ideally, you would put only 1 on a dumbbell to add 2.5 pounds. This allows you to make an smaller level increase that let's you keep making progress when a 5 pound jump is too much. To sum it up, I have a single set, 2 total plates, so I can put 1 on each dumbbell. Having 2 sets, 4 total plates, won't give you anything extra when a single 5 pound plate would do.

I have a set of weighted pro style dumbbells with cap weights and a 1.12lb rubber cap on the ends will these work?

I wouldn't count on it. The magnets on the donuts most likely won't be strong enough to magnetize through the rubber caps.

Will thisbwork for kettlebells?

As the supplemental weights are magnetic they should work well on any sized kettle bell. Just make sure each donut is placed in the same spot on each bell so the bells don't become out of balance.
