I have used Walthers' cookbooks for a few years and keep coming back to her wonderful soups. My summer favorite is the Cold Cucumber Soup (with avocado and lime juice) which we eat all summer long. She has also helped me change up my winter soups with common ingredients I had never thought to include - as well as special occasion soups and stews.The layout is easy to read and the pictures are great! Also highly recommended is "Raising the Salad Bar" with its inventive salads and easily made dressings. No more bottled dressings for me!

This is a truly creative collection of recipes that aren't complicated to make and turn out delicious. I've made a number of these soups, and they are always big hits with guests. Each soup has something fresh and special about it that makes it distinctive. Great tips for soup-making in general as well. The book itself is a pleasure to browse through. Also use the author's previous books, Raising the Salad Bar and Greens Glorious Greens, all the time.
