We use food-grade silicone and steel reinforcements are thicker than other trays leading to a sturdy and durable product. In fact, most trays on the market don't include any steel-enforced rim at all. We wanted to create a true chef's grade kitchen tool, not another flimsy piece of junk that would leave you disappointed if it were to collapse spilling the fruits of your labor in the kitchen all over the floor. Another thing that impacts our pricing are the fees that Amazon charges to fulfill the orders through the Amazon Prime program. If you fill to mark, the covers leave enough room for expansion. I’ve used them for several months without any issue.
