First time to order this brand** A: If it just came out of your mailbox, it could be runny because it hasn't solidified. When I ordered mine in the summer, it literally looked like drawn butter in a jar. With time in the house or even in the fridge, it should definitely harden. I LOVE both types, but have a slight preference for the bit tangier cultured ghee, BUT the cultured it is also more expensive. The regular ghee is good, but I dislike the plastic jar - would prefer glass that the cultured comes in. Both types of ghee are good for you - from grass fed cows so includes essential Vitamin K2 which is vital for us, but we now lack due to changes in feeding styles (indoor and grain fed) of modern livestock/poultry in much of the world. Whichever brand of ghee you try, make sure it guarantees milk from strictly grass fed cows. Pure brand assures a grass fed product. Since ghee is just the fat gleaned from butter, it is shelf stable for a short period of time and can also change in texture depending on the temperature of your environment (but this doesn't change the flavor). Ghee is amazing to cook with if you can afford it.
