Anyway, I make tons of pasta and what I don't cook up fresh, I dry on a parchment lined cookie sheet in my oven at about 170 degrees F for a total of about 30 minutes or so - After 20 minutes I turn them and give them 10 or so more minutes - depending on thickness. Then I put them in a ziplock bag and store them in my freezer. I have read that they will stay good on the shelf for a while, but since they contain egg, I don't want to take the chance. So anyway, I love this thing! It's easy to use! Only problem is that you need a little patience to clean up - I tend to brush the crumbs off right away and wipe it down real good and really work on getting flour out of the crevices - I use the brush they provide and a toothpick for detailing, but you really need to let these air-dry for a couple of hours first, and I like to clean things up and put them away right away or else I get distracted and forget about them. So this is the only thing that I don't like, but really that's a personal problem. So buy this and enjoy the heck out of it.
