All-in-all, this was a great buy and while being top quality, it crucially cooks on all surfaces evenly. The Pain de Mie that slides out of the pan is perfectly baked and delicious. A: You can do it either way. But to get the a Square loaf you bake it with the lid on. I really like this pan. The square loaf makes great sandwiches.
