I love the size and the quality/durability of this bread pan is AMAZING!!!! I love that the lid actually locks into place and that it’s non-stick (I don’t use any oils to coat it) bread comes right out!!! It’s a heavier pan and not flimsy like some. My bread baked perfectly, just make sure you get a recipe for a 13x4 pan and that you keep an eye on it as it’s rising in the pan and when it’s about an inch from the top, close the lid and back. **Q: Panasonic Breadmaker sizes: M/L/XL--which would fit this?  And why a lid? ?  TIA!**
A: It depends on what kind of bread you're making. Rye, for example - For a 1.5 lb. loaf recipe, you need your recipe increased by about 30% for the 13" pan, but the 9" pan should be just right using the dough cycle on the bread machine and then turning it out to the bread (Pullman/"pain de mie" pan in this case, to bake.

As others have already answered, the lid is for a more square, no mushroom/muffin top loaf.

**Q: So, basically, you just make regular white bread recipe and then bake as usually except bake with the lid on? I've never used a bread pan with lid.**
A: It really is best if you use a recipe specifically called Pullman or pain de mie. If you use the king Arthur site recipe (and it works fine with any brand of bread flour, BTW), and you are substituting instant potatoes flakes for potato flour, do NOT double the amount, as was recommended in the comments. I did that, and it was WAY too much potato flakes. The bread was very moist, but it tasted so much like instant potatoes, it was off-putting. After that experience, I only used 2 or 3 Tablespoons of potato flakes, and the bread came out perfect. A couple of times, I didn't pay attention, and let the bread rise too high, but I just gently patted it to deflate it a little, then let it re-rise to about 1 1/2 " below the edge of the pan, then covered and baked. Baked it about 5 minutes less than the recipe instructions, but when I checked the temperature, it was perfect. Hint; add 1 TABLESPOON of white vinegar when you make any bread; you won't be able to taste it, and it will help your bread keep longer. There are only two of us, and sometimes homemade bread will mold before we can use it all, but the vitamin C in the vinegar helps prevent that. Happy baking!

**Q: Can this pan be used to make gluten free bread? Will using the lid prohibit the loaf from rising or will it spill out?**
A: A Pullman pan is ideal for GF bread because it is narrow, deep and the side are straight which helps support the rise. GF bread has a hard time rising and the shape of this pan really helps. The sides are close to 90 degree (not angled out) and it's narrower and deeper than most bread pans - three features that make this pan a great choice for GF sandwich bread. You get a compact tight bread. This is my GF go to pan. I leave the lid on or off, depending on my mood and the recipe. I mostly leave it off. Make sure your recipe will fill the pan or you might get a short loaf. King Arthur has an excellent GF sandwich bread recipe specifically for the Pullman loaf on their website. You won't be disappointed.

**Q: Do you need to change the baking time when you bake bread? Because my bread always comes out a bit undercooked in the middle and it's quit noticeable.**
A: As others have said:  get a thermometer to measure the internal temperature of the loaf.

Also:  It might be your oven.  If I'm baking bread at 350, I bake it say half an hour and then have to turn my oven up to 375 for about an extra 10-15 min to get the internal temperature up to 190.  It's been working for me.

Omgosh!!!! I cannot say enough about this pan!!! It is EXACTLY what I was wanting in a larger loaf pan!! It is like the store bought brand bread Sunbeam!! I love the size and the quality/durability of this bread pan is AMAZING!!!! I love that the lid actually locks into place and that it’s non-stick (I don’t use any oils to coat it) bread comes right out!!! It’s a heavier pan and not flimsy like some. ### ⭐⭐⭐⭐⭐ Time flies

I just ordered the large with lid. I noticed that I ordered the small with lid back in September of 2010. Time does fly. I don’t think I ever wrote a review. I couldn’t find one. It’s still going strong after 16 years, making good bread that doesn’t ever stick. I do oil it, and it is always hand-washed as recommended. I don’t think I would ever put it in a dishwasher if I even had one. Since nothing sticks, cleanup is very simple. I have my mother’s bread pans, and until I started using parchment paper, no matter what I did, the bread would stick. I would almost have to cut the loaf out with a knife. It was extremely annoying. My Pullman loaves, lidded or un, never stick. That is great. The lid fits very well. I am looking for the large pan de mie to perform as well as my small pan. 5/30/26: I have started using my large pan de mie pan now. I almost thought I received a defective one, or that I was too old and weak now to open and close the lid. I don’t recall having this much trouble with the 9” pan, but it is considerably smaller and I was 16 years younger when I bought it. I did a considerable amount of Googling. New lids fit very precisely. They are very tight, and hard to move, let alone latch and unlatch. Tips:Grease the rails and the pan rim, and slide the lid back and forth for several minutes. You may need to warm the pan a bit so that the lid loosens. USA Pan recommends “tapping” the lid scroll with the heel of your hand. It’s really a very hard whack. Lids are extra. If you buy it, there’s no sense in not using it, or to risk damaging it and a cast iron skillet by laying the lid on the pan upside down and weighting it down by balancing a skillet on the rails to achieve the flat top. Bonus: I put my flat-top loaf back in the pan and slide and lock the lid. It makes the best bread box. You can’t do that if you don’t properly use the lid to get a flat top. Round top loaves also do not fit in a lot of toasters. The odds are very good that your pan and lid are not defective and will loosen up with a little attention. Mine works much more easily now. I can generally latch and unlatch it with my fingers. It no longer feels like I am trying to drag a Buick backwards. An old, heavy Buick. A Buick with its brakes on. I don’t have any trouble at all getting the loaf out of the pan, once I get the lid off. These are quality pans that should serve you well for years. 6/08/27 Research and more research. Many online tips are just wrong, and I have found that out the hard way. 1. Turn oven on when you begin to roll out and shape the dough so it’s ready when the dough is. Tip: a docker really helps . 2. Butter and lightly flour the pan rim and lid rails. It keeps the dough out, also, close lid and bake when dough is 1-1/2” (max of 1”) from lid. Surface tension and ovenspring will cause it to fill the pan and rise up to the lid-without fusing the dough to the lid, and give it the proper Pullman loaf crumb. 3. Let it sit, lid closed, and steam for 10-15 minutes when you take it out of the oven. The steam will compact the bread, break any suction, and the lid will come off with ridiculous ease. 4. If the dough is hitting the lid, punch it down shape it again, put it back in the pan, check after 10 minutes as it will rise even faster now. 5. Baking without removing the lid will give you a thin, soft crust. If you want a thicker, harder crust, remove the lid for the last 10-15 min of baking.
