Review: Sharp choice - I picked up the Mitsumiro Sakuri Kiritsuke knife looking for something versatile that could handle both prep work and finer slicing, and it’s been a great addition to the kitchen. The first thing you notice is the design. Kiritsuke-style knives have that distinct angled tip, and it’s not just for looks—it actually makes precision cuts a lot easier, especially when working with vegetables or trimming meats. This knife feels well-balanced in hand, and the blade has a nice weight to it without being too heavy. Performance-wise, it’s sharp right out of the box and holds an edge pretty well with regular use. It slices cleanly through vegetables, meats, and even more delicate items like herbs without crushing them. It’s one of those knives that makes prep feel smoother and more controlled. The handle is comfortable and gives a secure grip, even during longer use. It doesn’t feel overly premium, but it’s definitely solid enough for everyday cooking. As long as you take care of it—hand wash, dry it properly, and keep it honed—it should last. A couple things to keep in mind: like most Japanese-style knives, it’s not meant for heavy-duty tasks like cutting through bones or frozen foods. Also, if you’re used to Western chef knives, the shape and technique might take a little getting used to at first. Overall, this is a great all-around knife for home cooks who want something a little more refined than a basic chef’s knife. It looks good, performs well, and adds a bit of that Japanese-style precision to your kitchen.
Review: Good quality knife with awesome price! - I honestly didn't expect much when I ordered this knife because of the price. I'm a professional sushi chef and have been working in the industry for more than 30 years. Over the years, I've owned and used many high-end Japanese sushi and kitchen knives, so I have pretty high standards. I bought this knife fully expecting that I might end up returning it if it didn't perform well. After using it, I was genuinely surprised. The fit and finish are excellent, the blade came very sharp, and it has stayed sharp much longer than I expected. What impressed me most is the value. A Masamoto gyuto can easily cost around $250, and a Kikuichi gyuto is around $220. While those are outstanding knives, this one performs far better than its price would suggest. For most home cooks—and even many professionals—it offers exceptional performance without the premium price tag. I've used a lot of knives over the past three decades, and I don't recommend products lightly. If you're looking for a quality gyuto that won't break the bank, I think this knife is an excellent choice.

## Features

- Japanese Kiritsuke Chef Knife: The 9-inch Kiritsuke knife combines an angled tip with a flatter cutting edge, helping this Japanese chef knife handle push cuts, long slicing strokes, scallions, onions, herbs, vegetables and boneless proteins with precise cutting control.
- San-Mai Hand-Forged Steel: The 3-layer 9Cr18MoV high carbon stainless steel blade is hand forged with a hard cutting core and outer cladding, giving this Japanese knife a structured build for balanced cutting strength.
- Angled Tip Detail Work: The angled Kiritsuke-style tip helps guide shorter cuts around garlic, shallots, herbs and garnish prep, giving this Japanese kitchen knife more detail control than a standard wide vegetable knife.
- Tsuchime Kurouchi Finish: The blade combines tsuchime hammered texture with a kurouchi black forged finish, giving this hand forged knife visible forged character while the textured surface helps reduce contact with sliced foods.
- Deep-Cryo Treatment and Rosewood Handle: After quenching and tempering, the blade receives deep cryogenic treatment with about HRC 60±2 hardness to support a stable cutting edge. The octagonal rosewood handle and sandalwood box complete the knife for controlled use and storage.

## Questions & Answers

**Q: Are these knifes made in Japan or China?**
A: I could not tell where the knife was made. It bears no country of origin. In the description information it refers to Japanese and under Country of Origin it also says Japan. How do you know where these knives are made; please tell me. Thank you very much. Mk

**Q: Dose this come with warranty if it breaks?**
A: This knife is made of Damascus steel. unless you severely abuse it, like using it for a tire iron, It is not going to break. These people seem to be very big on customer satisfaction and if you did manage to break it I am sure they would replace it, I am sure.

**Q: Why does this Santoku not have the divots? Do veggies stick to the knife when slicing?**
A: From here it looks like it does, unless you got the polished one, they will most likely have the stamp marks... the blackness kinda hides them, but no, I haven't had problems with anything sticking .

**Q: Is the blade full tang? Specifically does it extend through the handle?**
A: It’s not a full tang, it’s a hidden tang. It runs the length of the handle, yes, but full tangs are the entire width of the handle
