Not world class, but excellent for day to day home use. **Q: Are the knives already sharpened and ready to use?** A: Yes the knives are ready to go when they arrive, I would give them a wash before use. They do also come with a sharpening tool **Q: What grade stainless steel are these?** A: Unsure!! But they are really good knives. I've had them a year. No signs of rusting and only just had to sharpen then for the first time recently.
