I then made the chorizo mix and left it in the fridge for two days. I used my sausage machine to fill the skins as directed in the instructions. As they dry and cure they have to be wiped with white vinegar every two or three days. Depending on the conditions, warmth, humidity and air flow they should be ready after about three weeks. Longer the better I think, (within reason). They will loose between a quarter and a half of their weight, and they are worth waiting for. I have a home in Extremadura where the worlds very best Iberian pig is farmed and the worlds very best jamon is produced. Well, these home made chorizos compare very favourably with the local chorizo. I have just made a second batch and look forward to them. Easily worth 5 stars, more if I could. Ignore the negative reviews and try them for yourself.
