Our pad Thai paste does not include sugar as we focus on perfecting the balance of the herbs and spices - you as the homecook can add as much or as little sugar to fit to personal preference. Our high-quality blend of 100% natural fresh herbs and spices can produce 6 servings of Pad Thai. Ingredients: Shallots, Red Chilli, Tamarind, Rock Salt and Garlic Making Pad Thai Sauce from a Paste Sauce for 2-3 servings On gentle heat 1 tbsp of oil in a wok and slowly stir fry 35g Mae Jum Pad Thai paste for 1-2 minutes Depending on desired sweetness: Add 1-2 tbsp palm sugar** and 0.5-1 tbsp granulated sugar until dissolves and starts to caramelise, keep stirring until it darkens in colour Once darken, add 1-2 tbsp fish sauce and 60ml water to thin the mixture into a sauce. This is now ready to use. **If you can't source palm sugar, just use regular light brown sugar 2-3 tbsp in total Prawn Pad Thai Noodle Recipe | Serves 2-3 Once the sauce is ready, heat sauce in a wok and add 200g pre-soaked noodles . Keep tossing until all the sauce has absorbed into the noodles. Once absorbed, taste the noodles for doneness. If undercooked, add a little bit of water and toss again. Once done, turn down the heat and push the noodles to one side of the pan. Add add extra oil to the empty space and add 300g prawns . Allow to cook for a couple minutes before tossing together with the noodles. Again push the noodles to one side and add a little extra oil to the empty space and cracks 2 eggs . Break the yolks and allow to cook for 30 seconds, then put the noodles on top of eggs and cook for another 30 seconds. Flip and toss to mix eggs into noodles. Turn off the heat and add 120g bean sprouts and 4 chopped spring onions and toss until well mixed. All finished!
