**Q: Is this flour gluten free?**
A: I don't know, for sure, about this particular tapioca flour, but MOST tapioca flour is gluten free.  I don't use it as a baking flour, however, just as a thickener in pies and pastries.

A: I haven’t used it for gravy, but it makes sense that it would.  It’s a thinking agent that makes pudding so it should work as a gravy.   Google it!

**Q: Initially I thought this product is labeled incorrectly and is actually made from water caltop (Mandarin word = "菱") instead of tapioca plant. (This manufacturer specialize in Chinese food product) However, I found that 菱粉 in Mandarin as the packing can be used for both water caltop and tapioca, which are two different…**
A: More research.... tapioca comes from a plant and when I think of tapioca I think pudding with little balls in it that are jello like on the outside and rice like on the inside, my kids call them fish eyes.  As for tapioca starch or flour I figure it is a product of the tapioca balls I am used to using. Product does not appear to me to be mislabeled.

A: It's flavor-neutral. It's very much like wheat flour, but it has no gluten.
