how much cheese can I make with this kit?

I can't remember if there are three or four foil culture packets, but I mix 1/2 packet w/ 1/2 gallon goat's milk. So that means this kit will process three to four gallons of milk depending on how many foil culture packets there are in it. From that 1/2 gallon I can then fill up each of the four cheese molds pretty much to the top. One mold contains enough cheese to serve four people a good sized portion of cheese w/ crackers at say dinner. The cheese this kit makes has been so good that people are asking for my goat cheese for Christmas presents. I hope this helps.

How do you get the 1/4 or 1/5 of a drop of rennet that the recipe calls for? I can only squeeze one drop out of the bottle!

Thanks for asking. To add a fraction of a drop of rennet, you simply need to dilute the rennet with a measured amount of water and then adding just a portion of that mixture. For example, to add 1/5th of a drop, you dilute 1 drop of rennet in 5 tablespoons of cool water and use 1 tablespoon of the rennet solution in your milk. You will also find this tip on page 9 of the instructions in the recipe directions. Thanks!

How’s much goat milk to make 5 lbs cheese?

About 6 gallons for 5 pounds of cheese, depends on the type of cheese and the richness of the goat milk. 1 gallon of goat milk will make just under a pound of fresh French goat cheese or chevre and goat milk mozzarella will use a gallon of milk for just under half a pound of cheese.
