How would we know when they expire?

They don't expire. They remain edible forever. They presumably slowly degrade in taste and texture, so there is a "best by" date on the bottom, indicating when someone thinks you'd rather eat newer product. I have eaten this a year past "best by" (which is 18 months after manufacturing date) and couldn't tell the difference.
