Is black cardamom the same as green cardamom?

No. Black cardamom is a much larger, darker pod with a smoky, resinous character that comes from open-flame drying. Green cardamom is sweet and floral. They are not interchangeable in most recipes.

How do I cook with the whole pods?

Drop one or two pods in whole at the start of cooking - into hot oil, ghee or stock. Let them perfume the pot, then lift them out before serving. You can also crack a pod and use just the seeds.

What dishes is it used in?

It is a staple in biryani, dal, garam masala blends and Indian curries, and it is the backbone of Vietnamese pho broth. A little goes a long way, so start with one pod.

Is it Kosher, vegan and non-GMO?

Yes - all natural, vegan, gluten friendly, non-GMO and Kosher. No preservatives and nothing else added. Product of India, packed in the USA by Rani.

What sizes does it come in?

Whole pods come in 1.75oz and 11oz PET jars, 3.5oz, 7oz and 14oz resealable bags, and a 2lb bulk bag. There is also a ground black cardamom powder if you would rather have it pre-milled.
