Completely irrelevant question, but does this stuff smell good?

That's a good question haven't smelled it yet coming from someone who smells everything lol

Bhow much of a haze is left over after using the cutting compound and before applying fhe final polish?

Nottne this is not cutting compound. The 36 is just a heavier polish. But does not leave a haze

what set do you do after this?

Hey! We recommend applying a sealant like Jetseal to protect your work. JetSeal creates a strong shield against water spots, contamination, road grime, and UV sunlight. Innovative UV protection technology helps reject harmful solar rays and protect paintwork against fading and discoloration. https://www.amazon.com/Chemical-Guys-WAC_118_16-Anti-Corrosion-Protectant/dp/B001TFE38A/ref=sr_1_3?keywords=jetseal&qid=1566409870&s=gateway&sr=8-3

Will these products remove yellow spray paint?

These are not a strong rubbing compound so I would say no. You can try their line of butter wax. I was told that takes off spray paint and clay bars work ok on over spray
