Is it very sour or does it has some sweets in it? I read online that a true balsamic vinegar shouldn't be all sour.

I used mine to make a light glaze. Boil it with a couple tablespoons of sugar until as thick as you like. It came out beautifully. It’s a sweet vinegar.
