On the label for this product: 4g protein per 30 g flour (serving size) To calculate the percent: 4 × 100 = 400 400 / 30 = 13.33 This flour contains 13.33% protein.

What is the expiration date?

There is none on flour. We bought a huge amount worrying about shortages. I bake bread every week for my family and this is the best flour by far for that.
