I'm looking for something to work as a preamp to record directly into a Tascam portastudio - would this do the trick? Or would a Sansamp be better?

I don’t know the Sansamp but the M80 is a pre-amp so should work. They also make a pre-amp M81 which doesn’t have distortion and is a smaller form factor. I’m not particular fond of the M80 distortion but otherwise it’s a good solid DI/pre-amp with EQ.

Can I use INSTRUMENT output to go to my stage amp; and have it work whether or not the XLR is connected? Also, does the volume only affect the XLR?

I'm not sure since I do not use it that way. I use the XLR right into the mains. I am assuming that you would like to manipulate the 1/4" volume as you would with the XLR? I will say that this is a great pedal as a DI and not as a preamp per se. When I use my stage amp, I do not use this pedal as I connect my pedal board inline on the preamp and then take the signal post effect to the board from the preamp. If you would like, I can try the 1/4" set up and get back to you. i will be playing this coming Sunday and can leave you a message Sunday afternoon.

Nope. You can use a 9v battery or a standard 9v DC pedal power supply.

Can noise gate be used without distrotion ?

No, it cannot. The clean channel is SUPER clean with no need for a gate anyways. If you need a gate pedal, I recommend the Decimator for sure!
