how do you keep these alive as long as possible and what is the best way to turn them to fly?

Keep them in the refrigerator to keep them longer by slowing growth. You need to take the lid off once a day, no matter where you keep them. That way the Co2 is let out, which kills them if it builds up. If you want them to turn into flies just let them grow up. They will turn into flies on their own. When they turn black and crawl the the surface you can move them to an screen cage. They will soon be flies. There are specific types of cages needed for breeding though, if you are interested in that.
