Is it possible to turn off bluetooth completely and use only as a wired mouse (I would like it to be in "Airplane mode", undiscoverable by anything)?

Yes you can use as a wired only mouse with the Bluetooth switch off and USB cable connected.

Does the Usb get locked to the mouse so it does not unplug in case you want to charge it and use it at the same time?

It doesn't lock in per se, but it's tight enough that you'll have no issues with it unplugging during wired use on the .0001% chance you have to charge it while using it. As battery life is something like 3 months it shouldn't ever be an issue

What's the difference between this one and the Microsoft precision mouse other than color?

There is no difference. I got both as soon as they became available. I use the black one at my desk with my Apple Space Grey Magic Keyboard and the Silver one to travel with. By far the best mouse I've ever used.

Can I use it for gaming

I don't game, but using it , I agree that it is not a gaming mouse. Its meant for productivity.
