While the exact processing details are proprietary, we are happy to report that it is gentle enough to preserve the valuable flavanols and other polyphenols that help made cacao the superfood it is! Currently, there are no FDA regulations or certifying agencies on “raw”, which is why we have moved away from having a raw icon or using the term raw on our packaging. Also, there is no single agreed upon temperature of exposure that determines a food’s classification as “raw.” That being said, we still use the same processing methods we have always used. Navitas Organics has used the term “raw” in the past to reflect our cold or low temperature and minimal processing techniques. I just found out that cocoa powder is really high in nickel content because of the refinery process. Is this cocoa powder high in nickel? Thanks !
