Will this work for a bike that says dot 4?

Generally speaking yes. The main difference is boiling point between the two but I’ve always been of the mindset that you can’t mix them. Both are glycol based but I still wouldn’t mix, I’ve had problems with lines swelling internally in the past and couldn’t say that it wasn’t from the inadvertent mixing.

How many ounces does the brake system hold? I want to do a full fluid exchange, will this be enough for the front and back brakes?

Yes , plenty. I added all new brake lines and bleed and still had half left.

can you use mineral oil in sram guide re breaks?

My SRAM guide RSC brakes require DOT 5.1 brake fluid only. I would assume your brakes are the same but Google search for the service manual and it will tell you.
