There are some wireless serial examples included in the stock esp32 libraries.

Is there an included manual or instructions for programming?

I don't remember any instructions being provided, However if you install the esp32 board libraries in arduino the examples for the Heltec boards are already included. Select your model of heltec board in arduino and then look for the examples.

Have any of you found a good breakout board to use with these? all the variation's in breakout boards and these being atypical esp32s...

I used bread board. Just know the function of each pin. It's online.
