Purchased for my son whose in a culinary program.

Excellent to self teach these concepts. It's easy to read, difficult but not overly hard that you can't figure out how to do applications

Nicely written with real life application. Loved our daughter using this book to improve math skills. Made math real for her because she could apply math to something tangible. Excellent!

When beginning my first assignment in this book, I opened it up to chapter 4--and most of the chapter fell right out of the book. Upon examination, several small sections of the book had separated from the spine. I would definitely not buy this hardcopy edition. It didn't even stay in one piece for one assignment. It is junk.
