How do you control the speed of the pump?

Generally, you don't try to control the speed of the pump, but rather...you control how long it has power. This is generally used as a dosage type pump. In other words, you apply power until it pumps what is needed...then you remove power.

can it be used to pump sulfuric acid?

Yes it can but, and this is a big but, you need to check how resistant to sulfuric acid the tubing material is. If you don't liek what you find, replacing the tubing with a different plastic is possible.

Can this pump be used for potable water? Is it possible to change the tube out for something food grade?

The tube can be changed - that's true for all peristaltic pumps although the difficulty varies - and thus if you use a suitable material use for potable water would be no issue. (Not sure of your application but you should be aware that the flow rate is quite low.)-

Yes, this will run on 9 VDC. I have tested as low as 5 VDC and it works fine as long as there is no significant back pressure on the discharge hose. The pump's flow rate is roughly proportional to the voltage supplied to it, so you can roughly estimate what your flow rate will be as Actual Voltage/12 Volts X rated flow at 12 volts.
