can this do multi-pairing with more than one device (and across different platforms)?

What I know is that it can connect to Android, Windows 8 tablets and iOS. Simultaneously paring with different devices should not be a problem although I have not tried that.

What is the difference between U7R-00001 Business Version and U6R-00001 Retail Version?

From what I can find on the Microsoft site, the difference is in the packaging. It's probably just cheaper/simple cardboard packaging, so it costs less.

Does it have PgUp, PgDn, Home, and End keys (or Fn key combinations)? I don't see labels for them on any of the keys.

Of course it does.PgUp, PgDn, Home, and End keys are on the Upper-Right Corner of the keyboard.

Problems with Media Keys for Windows 7 x64 bit? I cant seem to make them work. When i press them i only get help menu when in Media player
