Are daniel smith paints usually more granulating than other brands? I know not all colors are the same.

No more than some, but more than Windsor & Newton! Daniel Smith is only 2nd to M Graham!

Aren't they overpriced for 5ml tubes?

Daniel Smith has been always associated with quality paints that will last you a bit longer since a little goes a long way. Definitly it is a bit cheaper to buy the set than individually but if you are aiming to get a specific colour just buy individually.

I'm just starting my Daniel Smith journey. What are good colours to add to this collection, over time? :)

All Daniel smith colours are good. Start with the primary colours, great for mixing and creating a wide variety of colours. You can also buy his Primatek colours. Rhodonite Genuine, 5ml Jadeite Genuine, 5ml Amethyst Genuine, 5ml Mayan Blue Genuine, 5ml Hematite Genuine, 5ml Piemontite Genuine, 5ml These are lovely and have granulating effect. I like to make sure I have sepia and rose pink in my collection as well.

Are they transparent ?

Depends the quantity of water you use . they can be . I have used them as aglaze . They are one of the best makes of paints you can use. I recommend them
