gets very hot under stressful situations?

Only on all core loads. Gaming or workstation situations won't see a problem with normal cooling. You can power limit in the bios to control this too.

Are there any drawbacks of using a z690 board on this cpu?

Also, Make sure the z690 board has BIOS Flashback, or else you will need a 12th Gen CPU (an RAM, etc.) already installed to do a BIOS update.
