How does it compare to Aunt May's?

I'm not familiar with Aunt May's so my answer may not be the best. This is not a hot scotch bonnet sauce, it's much more subtle than that. It has heat but also a lot of flavour so if you want a sauce that has that then this is the one. It's much hotter than tabasco for example but not as hot as some devil sauces I've had. This is my go to sauce when I want heat and flavour but not to blow my head off.

How hot is this? On a scale where 1 is "tabasco - shake it over scrambled eggs, who cares" and 10 is "one drop will have you in pain for hours"?

I guess it depends on your pain threshold. It's not as hot as say, a scotch bonnet sauce but it's more flavourful than just heat so I would say about a 4 on the heat scale with habanero being a 5, scotch bonnet being a 6 and a naga ghost pepper sauce being an 8 and Carolina Reaper being a 10. This Windmill sauce is great. I buy it all the time for use with pasta and rosti. It's got a lovely mustard flavour as well as the peppers.

does sauce have to go in fridge

Errrrm no. I put mine in the fridge but to be fair in a cool unlit place should be fine. Mine didnt last a month, used it alot. Its not overly vinegar in base but has mild citrus flavours so pretty sure that keeps it well. Its worth a try especially if you like hot sauce on eggs.

Does it come in a glas or plastic bottle?

It comes in a glass bottle. But don't bother buying. I paid £7 for it and when it arrived, it was off!!
