Can this used over old ugly ceramic kitchen tile?

I don't think so. This material is not heavy enough to span the grout space without eventually sinking into the space

Is it hard to do the countertop edges

I made a puzzle table that has square 90 degrees edges. I am not sure about curved edges The square edges were easy to do.

is it better to remove the metal strip between the flat surface & the upright... or just install over it ?

It would be better to remove it since instant granite has an adhesive backing which can eventually pull away from that surface due to the gap between the wall (or counter) and the metal transition piece. Instant granite should be tight against the entire countertop surface including the counter backsplash for best results.
