Are this seeds viable ?

I would say no. A chipotle is a smoked dried jalapeño. Most commercially grown dried chillies are dried with IR heaters, which in effect sterilise the seeds

How many do i use for a pulled pork? These seem larger and discoloured compared to previous orders...

Well Sarah H, chipotle chillies are mild but smokey so for pulled pork I'd use 4 blitzed in a spice grinder to use as a rub or soaked chipotle In cola as a topping in a burger! Have fun!
