The photos show no sugar and yet the "important info" says it includes "organic evaporated cane juice" - which is accurate?

This item does not contain sugar there are other true lemon products that does contain evaporated cane juice those are the ones that make limeade or lemonade

If the item exceeds limitations in shipping as yours does, it is direct shipped to your home for security reasons as well as safety. Extra large items are not shipped to say employers or other businesses due to liability. And some businesses (like mine) do not like items delivered to their offices taking up room or cumbersome items limiting tg their space. Hope this helps.

Can this product be used to enhance lemon flavor in baked goods?

I don't know the answer to that. I have not used the true lemon in anything I've baked. I used it for my water, soda pop, and to enhance things I have already cooked. I don't know if it will change the chemistry of the product by baking with it. I'll have to try it.
