Are the armrest at all adjustable? Do they open out for a flatter fit?

They are adjustable with screws that are attached to the armrest. They open up once your weight are on the armrests.

will these fit on a Giant Disc Road Bike that has the hydraulics in the middle of the handlebars - like the sl1?

No it will not. I have a Giant Defy 2 with the reservoir in front of the stem. We had to redesign the brake system to make room for the aero bars.

The armrests have a bunch of different positions you can adjust by positioning two screws in various screwholes. Also the pad sticks to the armrest by velcro allowing for further adjustment, The armrests pivot into a flatter position when you put your arms on them. This is not adjustible. They are held up in the position you see in the picture by a weak spring but go to the flat position when you put your arms on them. I would like them to be a little higher up but this is not possible unless I figure out some way to keep them from going all the way down.

Has anyone found an adapter for oval or flat drop bars?

Based on how they are built I can't imagine it fitting any sort of adapter without dismantling everything and putting on a new mount. My areo bars on my flat bars are built totally different. I'd look for aero bars to specifically fit your bars. Maybe your LBS would have something.
