The developer had a Q&A after the reveal. The starter Eevee or Pikachu you receive will not evolve, but the game will give you the chance to capture more of them to evolve

Can you battle wild pokemon? or is it just like pokemon go you just throw balls? because i only saw them throwing balls, but not battling.

The Pokémon: Let's Go games are aimed at more casual players. Wild Pokémon encounters skip the battle mechanics of the previous games and immediately dive into a Pokémon GO-like capture mechanic. Pokémon battles are still included in the games, however they are restricted to challenges against Pokémon Trainers, Gym Leaders, etc.

Did they say there would only have one save like the Gameboy versions or several?

You can have one save file per user account on the Switch, since each user account has its own save data for all games.

Is this bundled with the pokeball joycon?

This is just the game by itself but as of today June 11th, Nintendo's website shows bundle editions of the game which includes the Poké Ball Plus. MSRP is $99.99. It says Pre-order now but none of the retailers linked currently have it on their sites.
