Could I use one of these bits to drill holes for mounting taxidermy birds?

Yes, but avoid using them to drill peep holes into the adjoining motel room.

Are bits hard to remove from case? Looks like not enough room between them for your fingers.

They pull out fine. The smallest 2 or 3 bits I had to work loose the first time. Not a problem. I’m female and 73. Wasn’t an issue for me.

Are they just for aluminium? Are they designed for soft steel?

No you can use them on wood, steel, aluminum, plastics and just about everything.

Does this work with a dewalt 20v max and can it drill through metal?

I should work fine with your drill either chucked or with a snap adapter. I have used mine in wood and aluminum with very good results but have not tried with steel.
