I made bagels with 6 cups flour. They weren’t chewy. How much vital wheat gluten should I add to make then chewy?

You might try exchanging 1 or 2 cups of flour with the gluten flour. I would not exchange more than that at first. I have made bread with almost 100% gluten flour but not bagels. Gluten is the protein part of wheat flour so should be chewy. Hope this helps.

If this is purely gluten, why does it have 4g of starch?

The package states vital wheat gluten as only ingredient. It also tells how it is made on the package

How many cups or servings are in the bag?

About 1cup. I use 1/4”cup per 1-1/2# loaf of bread.

There’s 23 grams of protein in a 30 gram serving. Pretty sure that’s 76.666%
