What is the benefit of having two almost similar reds yellows and blues?

Proper color mixing. One blue is good for purple and the other is good for green. Mix the opposite and get a muted, dull or muddy color. Same goes for the other colors. No matter what we learned in school... red and blue don't make purple. Magenta + yellow = red. Therefore red + blue = all primary colors... also known as brown :)

is this acrylic or water soluble goauche?

This is gouache (basically opaque watercolor.)
