Can arapaho crape myrtle trees be pruned to keep maximum height of 8-10 feet? does it shed leaves in winter; i am in zone 6, is it hardy here

You could keep it pruned back, although it's frowned upon. Many call it crape murder. It would be better to choose a variety that matures to the max height you need. Zone 6 will be borderline. A harsh winter could kill the top growth of the tree and have to start over from roots the following year.

I planted these a couple days ago. When should I start to see growth on them? I live in central florida

Crape myrtles have a resting period called dormancy in the winter. They will start leafing out in the spring when temperatures get into the 80s. They are one of the last plants to emerge from dormancy in the spring but pay off as having one of the longest bloom time of any plant during the summer.
