about 2 1/4 cups. Should find a rice cooker cup to make measuring easier. They are not that expensive. Asian rice cup measures smaller than western measuring cup. 1 Asian cup for rice equals about 3/4 cup western.

yes, do not use metal utensils with it. wood or plastic.

It works well both on an induction cooktop and a gas stove. The instruction manual comes with the product.
